Helpful Hint
Though olive oil is a “good” fat, you can lower the fat in this recipe by cutting the oil down to only 1 tablespoon. You can also use less of an extra-sharp Cheddar cheese in place of the Colby-Jack to further reduce the fat without sacrificing flavor.

My Family-Style Chicken may take a little time to cook, but I promise you that it literally falls right off the bone. For Rachel and me, this brings back fond memories of Wright’s Farm, a family-style restaurant in Rhode Island. They make the best family-style chicken on the planet, but I’d like to think that mine is a very, very close second!
Shopping List
Vegetable oil spray
1 (4-pound) chicken, cut into 8 pieces
1 teaspoon kosher salt
1 teaspoon paprika
1/2 teaspoon black pepper
1/2 teaspoon poultry seasoning
1/2 teaspoon dried oregano
1/8 teaspoon garlic powder
4 bay leaves
Lemon zest, for garnish
Chopped parsley, for garnish
Preheat the oven to 350°. Lightly coat a roasting pan with vegetable oil spray.
Place the chicken pieces in the center of the pan and sprinkle each piece evenly with the remaining ingredients, excluding the garnishes.
Cover the pan tightly with aluminum foil and bake for 1 hour.
Remove the chicken from the oven and baste with the drippings. Continue baking uncovered until well browned, about 1 additional hour, or until the meat is falling off the bones.
Arrange the chicken on a platter and sprinkle with lemon zest and chopped parsley before serving.
